These french toast sticks from Super Healthy Kids are a good way to add some vegetables to breakfast. My two year old was excited because it had the word “cake” in it. The added toppings make it fun too with some added nutrition.
Ingredients: (I made half the recipe and used two pieces of bread and I still have some of the egg mixture left over to make more tomorrow)
4 Large Eggs
1/4 cup milk (or OJ if you don’t drink milk)
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup shredded carrots
1 tablespoon unsweetened shredded coconut (optional)
5 slices whole wheat bread (I toasted mine a bit first and let it sit on the counter to get a little crunchy before dipping it in the egg mixture)
Honey or maple syrup to drizzle on top (optional)
Yogurt for dipping (optional)
Mix eggs, milk, cinnamon, vanilla, and carrots in a shallow dish. Dip bread one at a time in egg mixture. Place coated bread on a buttered or oiled skillet over medium heat or griddle (I set mine at 325 degrees) and cook both sides until egg is set and cooked. Slice into strips. Drizzle honey or maple syrup on top and sprinkle with shredded coconut if you wish. Bananas or pineapple are a great topping too.
