These banana split bites from The Coconut Mama are so easy to make and are a somewhat healthy dessert! I made them for dessert on Christmas.
2 bananas, sliced up
Some peanut butter (or any nut butter, sunflower butter, etc) to spread on banana slices
Some coconut butter to spread on banana slices
1 cup chocolate chips (I used dark chocolate chips)
1-2 tablespoon coconut oil (or coconut butter)
Unsweetened coconut shreds
Melt chocolate chips and 1-2 tablespoons of coconut oil or coconut butter in a small saucepan over low heat. Stir frequently. Remove from heat and allow to cool but not harden.
Spread coconut butter on a banana slice and peanut butter (or other but butter) on another banana slice and put together. Do this for all of the banana slices.
Dip each banana bite into the chocolate-coconut oil or butter mixture and place on a silicone baking mat or a wax-paper lined cookie sheet.
Sprinkle with unsweetened coconut shreds.
Place cookie sheet in freezer for 15-30 minutes until chocolate is set. Freeze longer if fully frozen banana split bites are desired.
Store in an airtight container in refrigerator or freezer. I stored mine in the freezer because we like frozen bananas.
