Banana “Pancakes”

Banana pancakes
These pancakes are really simple and easy to make. Someone posted about making them in a whole foods group I’m in so I had to give them a try. I have a feeling we will be eating these for breakfast a lot.

Ingredients:

  • 1 mashed banana (I just used a fork to mash it really well)
  • 2 eggs
  • Coconut oil for the griddle or pan

Optional:

  • a couple drops of vanilla extract
  • dash of cinnamon
  • ground flaxseed
  • pumpkin pie spice

I used a little baking powder in mine to help them rise a bit but I don’t think that’s necessary. I won’t be using it next time.
Plain yogurt mixed with mashed raspberries and cinnamon was used for dipping. Fresh berries on top would also be good.

Instructions:
Preheat griddle to 300 degrees or a skillet on low-medium heat on the stove. Whisk the eggs in a bowl and mix in the mashed banana and optional ingredients.

Put a little coconut oil on the griddle or pan. Add a silver dollar-sized amount of the banana-egg mix to the griddle or pan. Let the cake set for 30 seconds to a minute (or when the center bubbles) & flip it.
