Veggie Pinwheels

I’ve made these veggie pinwheels from Taste of Home a few times for parties. They are really easy to make and are a crowd pleaser. We had my daughter’s 2nd birthday party last weekend and I served them along with other finger foods.

  • 1 package (8 ounces) cream cheese
  • 2 tablespoons onion salad dressing (I used Litehouse Sweet Onion but now that I see that sugar is the second ingredient, I might make my own from now on)
  • 1/2 cup finely chopped fresh broccoli
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped red onion
  • 1/2 teaspoon dill weed
  • 4 tortillas (8 inches)

In a small bowl, beat cream cheese and salad dressing until blended. Stir in the broccoli, carrot, onion and dill weed. Spread over tortillas. Roll up tightly; wrap in plastic wrap. Refrigerate for at least 2 hours. Unwrap and cut each into slices.

You don’t have to necessarily wrap them in plastic wrap and refrigerate for 2 hours first if you’re short on time. I have made them right before an event.
